Dazu werden die sieben Jahre alten Agaven von den Jimadores von Hand geerntet und in ebenso mhevoller Handarbeit die ananasgroen Herzen der Agaven extrahiert. Diese werden gekocht, zerkleinert und mehrere Tage eingemaischt. Nach dem Brennvorgang wird das Destillat noch einige Monate in ehemaligen Bourbon Fssern aus amerikanischer Weieiche eingelegt.
